Ullapool Smokehouse is a small, traditional smoking business, based in the fishing village of Ullapool, in the far North West of the Scottish Highlands. Our aim is to produce the very best quality, traditionally smoked, salmon.
Traditionally, fish was smoked to preserve it, particularly before refrigeration. Today, it is primarily smoked for its rich, distinctive flavour, with the slow process adding a deep smoky aroma and complex taste that makes it a sought-after delicacy.
Our traditional smokehouse dry-cures fish with sea salt, cold-smokes it over oak whisky barrel shavings in a brick kiln, and finishes with a secret malt whisky cure. This slow, careful process enhances the flavor and texture, ensuring the highest quality.
The fish we use is sourced exclusively from the pristine waters of the Scottish Highlands, ensuring the highest quality and sustainability. Our suppliers,Wester Ross Salmonand Loch Duart, are renowned for their dedication to traditional, low-impact farming methods.
