Traditionally, fish was smoked to preserve it, especially before refrigeration. Today, it’s primarily smoked for its rich, distinctive flavor, with the slow process adding a deep smoky aroma and complex taste that makes it a sought-after delicacy.
Our traditional smokehouse dry-cures fish with sea salt, cold-smokes it over oak whisky barrel shavings in a brick kiln, and finishes with a secret malt whisky cure. This slow, careful process enhances the flavor and texture, ensuring the highest quality.
